Valentines Raspberry Mousse

Enjoy a delicious Raspberry Mousse that is easy to make, perfect for a Valentines day treat!

Ingredients
  

  • 1 cup raspberries
  • 1/2 cup sugar
  • 1 tbsp Teablooms Raspberry Hibiscus Bloom tea
  • 1 tbsp fresh lemon juice
  • 1 pack unflavoured gelatin
  • 2 cups whipping cream

Instructions
 

  • Steep Teabloom's Raspberry Hibiscus Tea in a teapot. Set aside
  • Cook the raspberries in a pot on medium heat. Add the sugar and mix together until you get a jam like consistency.
  • Strain the mixture in a bowl making sure you only get the liquid.
  • Add the raspberry tea, freshly squeezed lemon juice, and the unflavoured gelatin together. Mix well. Transfer in the previous pot and mix until it is hot. Set aside and place in a fresh bowl so it cools.
  • With a mixer or a beater, add 2 cups of whipping cream. With a piping bag or a ziploc, place 1 cup of white whipping cream to use for the topping.
  • Place the raspberry syrup in the mixer and fold it in with the rest of the whipping cream. Place this in a ziploc or a piping bag.
  • If using a ziploc, cut a small hole on the side and start piping the raspberry mousse in a small serving cup. Add fruits in between. Top it off with the white whipping cream. Garnish with sprinkles and refrigerate for a soft and creamy texture. Enjoy!
