What Is Lemon Posset?
Lemon posset is a rich, velvety dessert made with just three ingredients: cream, sugar, and lemons. The magic of the dish lies in its simplicity. When cream is heated with sugar and then combined with lemon juice, it curdles and thickens naturally, creating a custard-like texture without the need for eggs or gelatin.
Served chilled, lemon posset is smooth and creamy with a bright, tangy flavor from the lemon. It's usually presented in small ramekins or dessert glasses and often garnished with berries, mint, or a light dusting of powdered sugar.

The History of Lemon Posset
Lemon posset has an intriguing history that stretches back to medieval times. However, the dessert we know today has evolved significantly from its origins. In its earliest form, posset was actually a hot drink made from milk curdled with ale or wine, often flavored with spices like nutmeg or ginger. It was believed to have medicinal properties and was commonly used as a remedy for colds or as a nighttime drink.
Over time, the posset transformed from a beverage to a dessert. In modern British cuisine, it became associated with lemons, sugar, and cream rather than alcohol and spices. The version we enjoy today is purely a dessert, loved for its refreshing balance of richness and acidity.

Lemon posset may be a simple dessert, but its elegance and flavor make it a standout. Add a twist in flavour with a tea infusion and you are in for a delicious and refreshing treat !
